1 CUP BABY LIMAS (blanched or frozen & thawed)
1 CUP TOMATOES (DICED)
1 TABLESPOON FRESH THYME
2 TABLESPOONS OLIVE OIL
SALT & PEPPER
DIRECTIONS: SAUTEE ONIONS, GARLIC & PEPPER IN OLIVE OIL. ADD BLACKEYED PEAS & LIMAS. ADD TOMATO AND CORN. ADD SALT & PEPPER TO TASTE. ADD THYME. COOK UNTIL TOMATOES OPEN UP. Serve hot or cold.
